Our core cuisine is Modern Australian, masterfully prepared by our Head Chef, Emanuele Pelonero and team who have significant Australian and international experience gained in some of the world’s best restaurants. Emanuele Pelonero is an accomplished Italian chef whose culinary journey has traversed Michelin-starred kitchens across Italy, the UK, New Zealand, and Australia. A proud alumnus of Alma, Italy’s foremost culinary school under the founder of modern Italian cuisine Chef Gualtiero Marchesi, Emanuele has developed a unique cooking style that harmoniously blends inspiration from nature with a delicate touch of Asian culinary traditions. Passionate about Australian native ingredients and seafood, Emanuele is committed to a sustainable and ethical approach to sourcing ingredients, ensuring that each component of his dishes is treated with the utmost respect. His culinary creations are a celebration of the diverse and rich flavours that nature offers, brought to life through expert technique and a profound love for cooking.
